Origin:
Finca Santa Josefita, established in 1932 by Mrs. Josefa Ariz, is nestled in the Apaneca-Ilamatepec Mountain Range of El Salvador. This region’s high altitudes, ranging from 3,900 to 4,500 feet, combined with its volcanic soil and subtropical climate, create ideal conditions for cultivating exceptional coffee beans. The farm’s commitment to preserving its natural rainforest ecosystem contributes to the unique flavor profile of its coffee.
Processing Method:
After meticulous handpicking, the coffee cherries are transported to the nearby Balcanes Mill, just 2 km from the farm. Here, they undergo natural processing, being patio-dried for 18 days. This method enhances the beans’ inherent fruity characteristics, resulting in a vibrant and complex cup.
Flavor Profile:
This light roast coffee boasts a full-bodied experience with pronounced notes of raspberry and strawberry. The natural processing accentuates its fruity acidity, offering a bright and refreshing taste. The cup concludes with a smooth, lingering finish, making it a delightful choice for those seeking a flavorful and aromatic brew.
Brewing Recommendations:
To fully appreciate the nuanced flavors of this coffee, we recommend brewing methods that highlight its brightness and complexity. Pour-over techniques, such as Chemex or V60, are ideal for extracting its fruity notes. Alternatively, using a French Press can provide a fuller body, emphasizing its rich undertones. Ensure your water temperature is between 195°F and 205°F for optimal extraction.
